Super Satisfying Vegan Carbonara On a lazy Sunday afternoon, I always loved a good, rich carbonara but since adopting a  plant-based diet , finding a vegan replacement has been nearly impossible in restaurants. So I had to take the matter in my own hands and after many failed attempts to create a perfectly luscious vegan carbonara. Ah! This recipe is so good! And simple! I used actual dairy-based cheese but followed the rest of the recipe to the T. Its safe to say, my sunday lunch was extremely soothing and satisfying. A traditional carbonara is made with eggs, bacon or pancetta, and cheese (hello cholesterol bomb).
